At Chocolatería Herleef, we believe great chocolate is not simply tasted — it is lived, felt, and remembered. Behind every bar, truffle, and handcrafted piece lies a story that begins long before it reaches your hands. It is a story of land, tradition, dedication, and the pursuit of creating flavors that awaken emotions.

Our chocolate begins its journey with cacao grown in fertile, biodiverse regions of Costa Rica and beyond. We carefully select farmers who share our values of sustainability, respectful cultivation, and fair trade. These producers nurture their cacao trees using environmentally friendly practices, ensuring the beans retain their natural richness and complexity. Once harvested, the beans undergo a meticulous fermentation and drying process — two essential steps that shape the chocolate’s future aroma and depth of flavor. Only the finest beans make it into the next stage of the journey: our workshop.
At Herleef, crafting chocolate is both an art and a science. Our artisans use traditional chocolate-making techniques that honor centuries-old methods, while also embracing modern innovation to refine each batch.
The process includes: Roasting the cacao to bring out its unique flavor profile Breaking and winnowing the beans to obtain pure cacao nibs Grinding and conching to achieve the silky texture that defines our chocolate Tempering with precision to ensure a flawless shine and satisfying snap This balanced approach allows us to create chocolates that are consistent, elegant, and expressive — chocolates that tell the story of their origin through every bite.
